As the United States celebrates its 250th anniversary, Delmonico’s, America’s first fine dining restaurant, is commemorating the milestone with the debut of the Delmonico’s America 250 Baked Alaska — “America’s Birthday Cake,” a new dessert inspired by one of the restaurant’s most famous culinary contributions to American desserts.

Created by acclaimed chef Miro Uskokovic of Hani’s Bakery + Cafe and Delmonico’s longtime consulting pastry chef, the commemorative dessert launches on July 4, 2026, at the iconic Delmonico’s in Lower Manhattan. The dessert will also serve as a signature menu item at Delmonico’s Reserve, the brand’s highly anticipated new Midtown Manhattan concept scheduled to open in Fall 2027.
Founded in 1837, Delmonico’s is widely recognized as America’s first fine dining restaurant and one of the most influential culinary institutions in the nation’s history. For nearly two centuries, the restaurant has helped shape American dining by introducing, popularizing, and elevating countless dishes, hospitality standards, and culinary traditions that continue to define fine dining today. Credited with iconic creations such as Delmonico Steak, Lobster Newberg, Eggs Benedict, and Baked Alaska, Delmonico’s has long served as a cornerstone of American culinary culture. As the nation celebrates 250 years of history, Delmonico’s is honoring its own legacy and its role in the evolution of American cuisine through a modern interpretation of one of its most celebrated culinary innovations.

The new dessert draws inspiration from the original Baked Alaska, a dessert popularized at Delmonico’s during the nineteenth century by legendary chef Charles Ranhofer. Typically prepared with banana ice cream, walnut cake or sponge cake, and apricot jam or fruit preserves, it was created in 1867 by Ranhofer to celebrate the United States’ purchase of Alaska from Russia. Initially, Ranhofer named it “Alaska, Florida” to highlight the contrast between the cold ice cream and warm meringue.
Ranhofer later featured the dessert in his 1894 cookbook The Epicurean, where versions appeared in dramatic molded forms inspired by snow-covered peaks and often shaped as towering cones or mountains. At a time when ice cream production, freezing techniques, and elaborate pastry presentations required extraordinary skill and labor, Baked Alaska was considered one of the most technically ambitious and imaginative desserts of its time.
For the America 250 celebration, Delmonico’s revisits the historic, showstopping dessert in a striking cone-shaped presentation inspired by Ranhofer’s original creations while highlighting ingredients deeply rooted in the American landscape. The dessert features pawpaw, the largest fruit native to North America, as the dessert’s ice cream component; wild blueberries, among America’s most beloved native fruits, are for the dessert’s wild blueberry lemonade sorbet; and pecans, the only major tree nut indigenous to North America, are used for the cake base.
Delmonico’s modern interpretation is available as a dessert for two ($40), allowing guests to experience the historic creation in an intimate format. Given the intricate preparation required, only 10 of the desserts will be produced daily. For private events and special occasions, larger versions serving 10 to 12 guests will also be available upon request.
